Research Activity
The main research lines can be summarised as follows: Valorisation of waste products from the agri-food industry and study of innovative methods for the recovery of bioactive and functional compounds with high added value (polyphenols, prebiotics, vitamin D, etc.). The activities refer to studies of methods for the characterisation of molecular classes in waste products and the production, fractionation and characterisation of extracts from agri-food waste products. Studies on the characterisation of fruit, nuts and derived products: Euterpe oleracea, Tonda Gentile Trilobata hazelnuts and derived products, cocoa and derived products, grapes and wines, persimmons and persimmon vinegar, alternative preservation methods for small fruits, valorisation of blueberries and raspberries with selenium enrichment. Evaluation of biogenic amines and derived alcohols in fermented foods. Pigmented rice: characterisation, valorisation, impact of cooking and digestion. Evaluation of alternative sanitising treatments on beef.
